I decided to make Acorn Squash pie for this thanksgiving. It turned out way better than I expected.
Ingredients
2 large Acorn Squash
2 Cinnamon sticks
8 slices of ginger
2 tsp cinnamon powder
2 tsp vanilla extract
1 tsp nutmeg
1 egg + 1 egg yolk
1/2 stick butter
3 tbsp sugar
1/2 lime
Directions
Preheat the oven at 350F.
Cut the acorn squash in half and scoop out the seeds. In each half, put 2 slices of ginger and half a cinnamon stick. Roast for 60-70 minutes until the acorns are soft. Let it cool for 10 minutes and scoop out acorn flesh.
Melt the butter and add it mashed acorn squash. Add cinnamon, nutmeg, vanilla and sugar. Stir until it is thoroughly mixed. Add lime, eggs and stir until mixed. Pour half into pie crust and let it rest for 10 minutes.
Preheat oven at 400F. Bake the pies for 55-65 min. Test to see if the pie is done with a knife. If it comes out clean, the pie is done.
